The saffron grown in the L’Aquila territory is one of the finest spices overall, whose production has been transmitted from generation to generation.
The harvesting is in the morning before the sunrise: the red stigmas are separated from the purple flowers.
A long and careful work: 150 flowers are necessary in order to get 1 gr. of saffron. Stigmas are separated from the rest of the flower by hand, are dried out and grilled with almond, oak and cherry wood.
